Brisket is available in either flat or rolled style. We have it available in 1/2 cuts or full cuts. We raise most beef to create a 1lb TBone so a large brisket for us is between 4.5 -5lb maximum. We are unable to get a larger size. Based on a 3lb purchase.
 
Brisket is a type of meat without alot of extra fat or marbling. It is best cooked long and slow or smoked. Cut on the diagonal, it is great served with your favourite sauce.
